I love camping with my kids, I’m terrible at it.

I love getting away, unplugging, hiking, and roughing it. BUT I struggle with the gear, I never pack what I need, and if there’s a sniff of bad weather, I’ll cancel in a heartbeat.

But I love it. So I seek out as many family camping hacks as I can. From having ready made gear bins, to using frozen meat as ice packs in my cooler, I try to streamline the process. I hate it, I love it.

The rewards are what makes it worth it. I love the anticipation my sons have before we make a trip, I love the smell of campfire, I love being out in the wilderness and rediscovering the simple pleasures in life.

There’s nothing like cooking in the great outdoors. From a backyard bbq of burgers and steak to a hearty breakfast over an open fire, cooking outside just feels better.

The latest camping hack I’ve added to my arsenal is to toss a carton of Burnbrae Farms EGG Creations in my camping cooler. No more fragile eggs to tiptoe around, these eggs are all set and ready to go for a wicked easy breakfast..

There’s just one rule when our family goes camping – first up has to make breakfast.

It’s a one pan job where you sizzle up some bacon or sausage or prosciutto (if you’re fancy). Toss some hasbrowns into that greasy pan to crisp up. And then you hit it with your favorite veggies. I like spinach, tomatoes, peppers, and onions. You pour in the ready to go EGG Creations, and then mix it all together.

As everyone is starting to poke their noses out of their tents because of all that fried meat in the morning goodness, you hit the skillet with your favorite cheese to goo it all together. Pour it on the plates as they wake up, roll it in tortillas for a wicked breakfast burrito, or just scoop it from the pan.

Oh, and there’s one other rule… last one to wake up has to clean up. But it’s easy, cause this breakfast skillet is all in one pan and the perfect recipe hack for an #EGGcellentSummer!

8 slice of bacon or 1c sausage meat or 1c chopped prosciutto
1 1/2c frozen hash browns
6 cherry tomatoes, quartered
1 red pepper, minced
2 handfuls spinach
2 chopped green onions
2c Burnbrae Farms EGG Creations
1/2c shredded cheese


Cook your meat in your skillet until crisp. Remove and set aside while pouring off all but 2 tablespoons of fat. Add your hashbrown potatoes to the pan. Return to heat and fry until potatoes are lightly browned. Toss in your spinach to wilt, along with the red peppers, tomatoes, and onion.

Once the spinach is wilted, toss your meat back in and then pour in the EGG Creations over the skillet mixture. Cook using a spatula to lift and fold partially cooked eggs so uncooked egg flows underneath. Continue cooking for about 4 minutes until cooked but not dry. Sprinkle with cheese, and greet everyone poking their nose out of their tents with breakfast in a skillet!
